These fights are called the Spanish American Wars of Independence. It was like a big, continent-wide game of 'I want to be in charge of myself!' Many brave people fought in these wars to create new countries.

Think of it like this: Spain was like the grown-up telling kids what to do, and the people in America were like the kids who wanted to play their own games.
