It all has to do with air pressure and gravity! First, you fill the tube with water. Then, you put one end in the higher water and the other end in the lower spot.

Gravity pulls the water down the tube. As the water flows down, it creates a space with less air pressure at the top of the tube. The air pressure pushing on the higher water then pushes it up and over the hump, and gravity keeps pulling it down the other side.
