Parmesan cheese, also called Parmigiano-Reggiano, is a super hard, yummy cheese that comes from Italy. It's not like the soft cheese you put on tacos. This cheese is aged for a long, long time, sometimes for years!
It gets its amazing flavor from special cows that eat fresh grass and hay. When it's ready, it's a giant wheel, sometimes as big as a small car! It’s a special kind of cheese that chefs love to use.

Parmesan cheese is super old, like, older than your grandparents' grandparents! It was first made over 900 years ago in Italy, in a place called the Emilia-Romagna region. Monks were the first ones to make it because they needed food that would last a long time.
They used milk from cows and a special ingredient called rennet. They discovered that by aging the cheese for a long time, it got a wonderful, strong taste and became hard.

How This Amazing Cheese is Made!
Making Parmesan is like a special recipe that takes a lot of time and care. First, farmers milk cows that eat good food. Then, they mix the milk with a little bit of rennet, which makes it thicken up like jelly.
This jelly is cut into tiny pieces and cooked. After that, it’s put into special molds to become round wheels. The magic happens when the cheese wheels are left to age for at least 12 months, sometimes even 2 or 3 years!
